Shaken Cucumber Salad

This Lao cucumber salad is inspired by laab, featuring many of the same bold flavors. It's the perfect summer dish—refreshing, cold, and light. Made primarily with cucumbers, the addition of mayo helps bring everything together. Once you try it, you'll want to keep cucumbers stocked in your fridge!

INGREDIENTS

  • 1 whole English cucumber, thinly sliced
  • 1/4 cup mint, chopped
  • 1/4 cup cilantro, chopped
  • 1 small shallot, thinly sliced
  • 2 tbsp lime juice
  • 1/4 cup fresh red peppers, thinly sliced
  • 2 dry bird eye chili peppers, sliced
  • Pinch of msg
  • Splash of fish sauce (or 1 tsp mushroom powder for vegetarians)
  • 1 tbsp Lao Spices laab blend
  • 3 tbsp mayo

INSTRUCTIONS

  1. thinly slice the English cucumber with a Mandoline
  2. In a 32 ounce deli container, add the cucumbers and all the prepped ingredients
  3. Close the container and shape the container well until mixed thoroughly
